Beef Stew
½ cup plain flour
2 tsp salt
1 tsp pepper
1 cup chopped onion
3 lbs beef stew meat - can use roast cut in chunks
2 cups frozen green peas
4 carrots sliced
6 potatoes cubed
2 cans (14.5 oz) diced tomatoes
2 cans chicken broth
Salt and pepper to taste
Combine flour, salt, and pepper in plastic storage bag. Add beef and shake to coat. Place beef in crock pot. Add remaining ingredients. Stir well. Cook for 6-8 hours on low. If needed to thicken, mix 2 tbs flour and 3 tbs water in small bowl and add to stew. Cook a few minutes longer until thickening has occurred.
